 I have made many salads all through my life and really, it does not get any simpler than this. Especially, when you are just getting started in the groove of eating salad.

 No need to take so much time thinking about what salad to have today. Simple Spinach Salad topped with shredded carrots and nama shoyu-lemon juice-tahini-garlic salad dressing covers your body’s need of vitamins and antioxidants. You can even expand this simple salad into a creation of your own by adding your other favorite vegetables.

I think it is worth mentioning that I call it the Immune Booster Salad because by consuming a serving size of spinach, it provides you with 188% of the daily recommended vitamin A and 48% of vitamin C. Plus, it has tons of antioxidants to fight diseases and keeps your body healthy!

Immunity Booster

Simple Spinach Salad
 

Ingredients:

  • Organic spinach

  • 1 cup shredded carrots

  • ½ cup tahini

  • Nama shoyu

  • Lemon juice or cider vinegar

  • 2 chopped garlic cloves 

Directions:

  1. Immerse loose spinach in a pot of cold water, rinse well and strain
  2. On the side, mix together:
    • ½ cup of shredded carrots

    • 2 Tbsp. nama shoyu

    • 3 Tbsp. lemon juice or cider vinegar with chopped garlic

  3. Adjust the nama shoyu and lemon juice to taste
  4. Thin to desired consistency and toss the spinach and dressing
  5. Now add the rest of the shredded carrots and any other vegetables that you choose
